CARIBBEAN CHEESE & BEEF CASSEROLE
The cheese is the Dutch influence, but the sweet, hot filling is pure
Caribbean.
1 pound ground beef
1 small onion, chopped
1 small green pepper, chopped
1 medium tomato, chopped
2 eggs, beaten
¼ cup fresh breadcrumbs
¼ cup raisins
¼ cup hopped pimiento-stuffed olives
2 tablespoons pickle relish
1 tablespoon finely chopped jalapeno pepper
12 ounces Edam cheese
Preheat oven 350º
Brown ground beef in medium skillet. Drain. Add onions and green peppers; cook until tender. Stir in all remaining ingredients except cheese.
Shred one-third of cheese; thinly slice remaining cheese. Add shredded cheese to ground beef mixture; spoon into greased 2-quart casserole. Arrange cheese slices on top of ground beef mixture; cover
Bake 30 minutes or until mixture is set and cheese is melted.
Let stand 5 minutes before serving
Make 4 to 6 servings
